网络餐饮为消费者提供了便捷的就餐选择,但同时也带来了诸多食品安全隐患,亟待重视。本文结合上海市15个行政区1018名消费者的调查数据,系统研究了质量监管对网络餐饮食品安全的影响及其作用机制。研究表明,政府监管、平台监管、媒体监督和公众监督均能有效降低消费者遭遇网络餐饮食品安全事件的概率,主要通过加强信息搜索与信息提供实现。进一步分析显示,质量监管对非学生群体及非政府/事业单位工作人员的网络餐饮食品安全事件发生概率具有显著的降低作用。由于这些群体面临较高的食品安全风险,质量监管通过强化信息传递和监管有效降低了其遭遇食品安全事件的发生概率。本文认为,质量信息的充分流通是保障网络餐饮食品安全的关键,应在社会共治理念指导下,提升消费者的风险防范意识、商家的社会责任感及道德水平,从而完善网络餐饮食品安全保障机制。
Abstract:Internet meals has provided consumers with convenient dining options, but it has also brought about numerous potential food safety hazards that urgently require attention. This paper combines survey data from 1018 consumers across 15 administrative regions in Shanghai to systematically study the impact and mechanism of quality supervision on food safety in Internet Meals. The research results indicate that government regulation, platform regulation, media supervision, and public supervision can all effectively reduce the probability of consumers encountering food safety incidents in Internet meals, primarily by enhancing information search and provision. Further analysis reveals that quality regulation significantly decreases the probability of food safety incidents in Internet meals for non-student groups and non-governmental/institutional employees. Since these groups face higher food safety risks, quality regulation effectively reduces their probability of encountering food safety incidents by enhancing information dissemination and regulation. This paper argues that the adequate circulation of quality information is crucial for ensuring Internet meals food safety. Guided by the concept of social co-governance, it is important to enhance consumers' risk prevention awareness, merchants' sense of social responsibility, and moral standards, thereby improving the food safety guarantee mechanism for Internet meals.
